Food and Wine Pairing

Food and wine pairing take on full meaning during an aperitif with the winemakers, Isabelle and Jean-Luc. You will have the opportunity to appreciate a range of dry and sweet wines paired with the Roussillon’s traditional products.

Depending on the season you will taste Collioure anchovies, Catalan botifarra sausage and pâté, ripened tomme cheese sprinkled with carignan marc, honey nougat, paired with wines from the domaine.

Five styles of wine:

  • Thirst Quenching Wines: Va Nu-Pieds, blablablanc, Jolly Rose and Jolly Rouge are light and fruity wines.
  • Regional Wines: Syahre , Fait d’Hiver, Chai moi and Isadora are vinified in barrels.
  • Naturally Sweet Wines (VDN): Muscat de Rivesaltes, Or du Temps and Passe-Temps are reminiscent of those available half-a-century ago.
  • Rancio Sec: Fil du Temps aged using a traditional Catalan oxidative method.
  • White natural sparkling: Pet'Nat, a sparkling Muscat, to drink cold during summer.
  • Rosé natural sparkling: Pet'Nat rosé, a 100% carignan sparkling wine, with flavours of blackcurrant or raspberry.
